Cream Puffs

Ingredients:
1 cup water
1 stick butter
1 cup flower
4 eggs

Instructions:

In a medium saucepan, boil the water and the butter. Bring to a simmer and stir in the flour about ΒΌ cup at a time. The mixture will become a big ball.

Let that blob cool to room temperature.

Preheat oven to 400 F.

Transfer the blob to a large mixing bowl. Using a slow setting on your electric beater (or your hands), add the eggs one at a time. Don't add the next egg until the previous one has been incorporated. Beat until smooth and velvety.

Lightly coat a cookie sheet with nonstick spray (or use a Silpat liner).

Drop the batter in 8 large spoonfuls on the cookie sheet and bake for 45 minutes.

Note: Using the same amount of batter, I will often make 12 smaller puffs and cook them for about 35 minutes. In either case, keep an eye on them. They should be a medium-golden brown and DRY on the outside, or else they'll collapse when you take them out of the oven.

Stuff with your choice of filling (warm chocolate sauce and ice cream; strawberry jam and whipped cream; etc.).
